Il est quasiment impossible de s’en débarrasser. Notre amie et voisine Pauline, envahie par cette plante dans son jardin, nous a fait découvrir que notre potager encore en partie en friche en était tapissé. Sa solution : manger l’égopode, tout à fait comestible, à la saveur entre le persil et le céleri. Bonus : l’égopode est anti-inflammatoire, d’où son autre nom d’herbe aux gouteux. J’en réalise quasiment toutes les semaines. Pendant longtemps j’ai varié les plaisirs régulièrement (tomate séchée, cumin, coriandre, poivrons grillés…) mais depuis un moment c’est cette recette à la fois simple et terriblement parfumée qui est devenu mon houmous « de base » . Un peu de citron confit dans le houmous pour une note acidulée délicieuse (le citron et moi c’est une vraie love story) et de dukkah par dessus pour des saveurs envoutantes. Je vous propose ici une recette permettant de réaliser un gros bocal de dukkah, faites moi confiance, ce mélange de graines, noix et épices du Moyen-Orient originaire d\u0026#39;Egypte va vite devenir un indispensable dans votre cuisine, tant il accompagne de nombreux plats à merveille. La sucrine, croquante et sucrée est parfaite pour cette recette et sans me vanter, ma sauce César vegan est carrément divine. Les champignons longuement rôtis à la poêle remplacent merveilleusement le poulet et apportent une touche d’umami (la fameuse 5ème saveur « savoureuse »). C’est une recette à la fois très simple et subtilement gourmande qui mérite vraiment d’être testée. Une bonne excuse pour utiliser le fameux mélange d\u0026#39;épice s\u0026#39;il traine dans vos placards et dans mon cas, même, d\u0026#39;en créer un sur-mesure, plus adapté aux plats salés avec une touche de coriandre et de cardamome en plus des habituelles épices qui le composent. Doux et presque sucré grâce à la chair du potimarron, parfaitement équilibré avec les saveurs salées. \u0026quot;peaux de pomme de terre\u0026quot;). A peu près tout dans cette recette me ravit : des pommes de terre, une coque à farcir avec ce qui nous plaît, le jeu de texture crousti-fondant, des combinaisons de saveurs infinies, des bouchées à manger avec les doigts, une recette zéro déchet où on n\u0026#39;a pas à éplucher les patates. Comme vous l\u0026#39;aurez sûrement deviné en lisant son nom, c\u0026#39;est une recette nord-américaine, mais on la retrouve également en Angleterre, notamment dans les pubs. La version classique se réalise avec du cheddar et du lard ou du bacon et est servie avec de la crème aigre. Ma version vegan est réalisée avec une crème de courge façon fromage fondu, un tartare d\u0026#39;avocat (en gros un quasi-guacamole), un peu de crème et du piment fumé.
